Recipe: Pepper Jack Stuffed Turkey Zucchini Meatloaf

We’re pretty obsessed with zucchini over here at Get Healthy U! It’s in season, it’s tasty, and it’s good for you! So needless to say a turkey zucchini meatloaf stuffed with oozing pepper jack cheese sounded pretty amazing to us, and it was! A delicious low-carb meal with tons of flavor and an “AWESOME” sauce indeed. Try it out for yourself and share it with a friend, this is a no-brainer that we will make again soon!
Ingredients
- 1 1/2 pounds extra lean turkey breast (about 96% or higher)
- 1 cup diced white onion
- 1 cup shredded zucchini, squeezed of excess moisture with a paper towel
- 2 cloves garlic, minced
- 1 egg, slightly beaten
- 1/2 cup panko breadcrumbs* (may use GF breadcrumbs)
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper (if you like heat)
- 1 teaspoon dijon mustard
- 1/2 teaspoon fresh cracked black pepper
- 1/2 teaspoon sea salt
- 4 ounces sliced pepper jack cheese
- (Sauce)
- 1/2 cup tomato sauce
- 1 1/2 teaspoons apple cider vinegar
- 1/2 tablespoon honey
- 1 tablespoon mustard
- dash of soy sauce (gluten free, if desired)
- dash of hot sauce
