Recipe: Pumpkin Chocolate Chip Oat Bars

It’s no secret that I love pumpkin more than most people!  The pumpkin gene must run in the family, because my daughter is also a pumpkin fanatic.  We made these bars last weekend and they were totally to die for!  They are vegan, which is perfect for my daughter, and gluten free, which is perfect for my husband.  We all gave these rave reviews.  They are a delicious guilt-free way to treat yourself!

Ingredients

  • 3 cups gluten free oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • pinch of ground cloves
  • 1 cup canned pumpkin
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/2 cup dark brown sugar
  • 1 tablespoon olive or coconut oil
  • 1/3 cup vegan chocolate chips, plus 2 tablespoons
