We love using a slow cooker because it makes healthy eating so easy! This simple slow cooker recipe for quinoa energy bars is a snap to prep, and the slow cooker does all the work. This tasty gluten-free recipe has 6 grams of protein and 4.3 grams of fiber per serving making it a delicious and healthy post-workout snack.

Ingredients

  • 2 tablespoons almond butter
  • 2 tablespoons pure maple syrup
  • 1 cup unsweetened vanilla almond milk
  • Pinch of salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/3 cup quinoa, uncooked
  • 1/2 cup raisins
  • 1/3 cup roasted almonds, roughly chopped *
  • 1/3 cup dried apples, roughly chopped
  • 2 tablespoons chia seeds
