Recipe: Soft Ginger Molasses Cookies

During a holiday season full of unhealthy eating and snacking, these soft ginger molasses cookies are a healthy, delicious cookie recipe that won’t leave you feeling guilty! Prevent a sugar-overload and feeling bogged down by unhealthy holiday habits with these grain-free, gluten-free, egg-free, dairy-free and paleo-friendly cookies. They’re so delicious that nobody will have any idea that the treat they’re enjoying is actually HEALTHY! Yum!
I made these cookies with my daughter this year and now I’m convinced it will be a tradition because they are so good!! One note: if you have a new container of coconut butter, make sure to dig into it – it acts just like regular nut butter so the top will be mostly oil and won’t give you the white frosting you want.
Ingredients
- For the Cookies
- 1 1/2 cups almond flour
- 1/3 cup coconut flour
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 2 1/2 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 3 tablespoon coconut oil
- 1/3 cup maple syrup
- 2 tablespoon molasses
- 1 egg or 1 flax egg
- For the Topping
- 3 tablespoons coconut butter
- Sprinkles
