Ingredients

  • 1 large sweet potato
  • 2 cups carrots
  • 1 cauliflower
  • 1 red bell pepper
  • 1 thumb-sized piece of ginger
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 4 tablespoons tamari or soy sauce
  • 1 bag fresh spinach
  • 1 tablespooon red curry paste
  • Optional
  • 1 handful fresh cilantro
  • 2 tablespoons peanut or homemade almond butter
  • Brown rice to serve
