Recipe: Thai Spring Rolls With Peanut Dipping Sauce

Thai spring rolls are one of our favorite appetizers. So crisp, fresh, and tasty! This gluten-free recipe looks fancy, but is actually quite simple to make. This peanut dipping sauce is amazing: made with simple wholesome ingredients and no MSG! These rolls keep well in the fridge for a few days making them great for a healthy snack or brown bag lunch.

Ingredients

  • For Dipping Sauce
  • 1 garlic clove
  • 1 thumb size piece of ginger
  • 2 tablespoons tamari or gluten-free soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons lime juice
  • 1/2 cup peanut butter
  • 1/4 cup water (more or less as needed)
  • For Spring Rolls
  • 1 cup cooked rice noodles
  • 5-8 rice paper sheets
  • 1 carrot
  • 1 avocado
  • 1/2 cucumber
  • 1/2 red pepper
  • 5-8 romain leaves or salad greens of your choice
  • 1 handful fresh basil
  • 1 handful fresh cilantro (optional)
