This delicious vegan coconut ice cream with swirls of wild blueberries and hints of lavender is paleo, gluten-free, dairy-free and DELICIOUS! As the weather warms up, recipes like this have us drooling! This ice cream is not only a healthy alternative to traditional ice cream, but it’s flavor is so refreshing, it’ll become one of your summer staples!


  • 2 (15 0z) cans full fat coconut milk
  • 1/2 cup coconut milk
  • 1/3 cup coconut palm syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons dried culinary lavender
  • 1 1/2 cups wild blueberries
  • 2 tablespoons coconut sugar
