Weeknight dinners are a continual struggle for most women we know. Whether you work full time and don’t get home until 6 or are a stay-at-home mom to little kiddos whose tummies are always hungry, getting a healthy dinner on the table in minutes is key. That’s why we’ve been fans of Trader Joe’s for a while. While we typically like making things from scratch and being able to control all the ingredients, TJ’s has plenty of short cut options that are actually super healthy and make meals way more doable. Here are some of our favorite quick and easy meals Trader Joe’s lunch ideas and dinner recipes you can make this week all using Trader Joe’s products. Oh and we’re also including a grocery list for you just to make life simpler. You’re welcome.
Monday:
BBQ Pulled Pork Sandwiches with Roasted Sweet Potatoes
Roast sweet potatoes.
Preheat oven to 425. Chop sweet potatoes into cubes. Place in a single layer on a baking sheet and drizzle with olive oil, salt & pepper, and toss to coat. Bake 15-20 minutes turning once halfway through.
Make a simple coleslaw & set aside.
1.5 cups organic shredded green & red cabbage
2 tablespoons organic mayonnaise
1 teaspoon white wine vinegar
¼ teaspoon celery seed
½ tablespoon sugar
Salt & pepper, to taste
Warm bbq pulled pork.
Follow heating instructions on package.
Plate!
Add pulled pork to sliced pretzel buns, top with a bit of coleslaw and serve with a side of sweet potatoes.
