Recipe: Healthy Thai Coconut Quinoa Bowl

We are all about buddha bowls lately. And we can definitely jive with this healthy Thai coconut quinoa bowl. Packed with veggies (sweet potato, carrots, edamame, cabbage, red pepper, etc!) , protein and flavor, this bowl recipe is the perfect vegetarian lunch or dinner! Mmm… thai food.


  • For the Coconut Quinoa
  • 1 cup quinoa, uncooked
  • 1 15-ounce can coconut water
  • 1/2 cup water
  • 1 tablespoon maple syrup
  • Roasted Veggies
  • 1 large sweet potato, diced
  • 2 cups carrots, diced
  • 1 tablespoon minced garlic
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • Purple Cabbage Slaw
  • 1 cup purple cabbage, finely chopped
  • 1 cup edamame
  • 1 small red pepper, diced
  • 2 tablespoons extra virgin olive oil
  • 1 lime, juiced
  • 1 tablespoon soy sauce
  • 1/2 tablespoon maple syrup
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried orange peel
  • Toppings
  • Peanut butter
  • Peanuts
  • Fresh cilantro
