Jazz up Meatless Monday with this vegetarian Banh Mi Bowl made with Gardein which is a GMO-free soy and plant based meat substitute. This easy bowl recipe is filled with fresh veggies and delicious vegetarian meatballs in a Teriyaki sauce. This easy recipe only takes 10 minutes to prep and tastes amazing!


  • 1/2 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 jalapeno, thinly sliced
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon brown sugar, white sugar, or agave
  • 6 Gardein Meatless Meatballs (or Teriyaki Chick’n strips)
  • 2 tablespoon Hoisin sauce (use the included Teriyaki sauce instead for the Chick’n Strips)
  • 1 cup cooked brown rice
  • 4 cups greens
  • 1/2 cup red cabbage, shredded
  • 1/2 cup bean sprouts
