Recipe: Hamburger Soup

There are a lot of names for hamburger soup—Bachelor soup, hangover soup, ground beef vegetable soup- to name a few. But whatever you call it in your house, this is one of my favorite recipes to make with ground beef.

Hamburger soup is healthy, easy, and coast effective to make. This recipe will be a hit with the whole family. It’s also easy to double the recipe for a group or to freeze for a later meal.



How To Make Hamburger Soup

Start by sauteing your ground beef, drain the grease, and set aside.  Next, saute your vegetables, starting with the onion and celery. After they are tender, fill with beef stock, add the ground beef back in, and let it all simmer together with salt, pepper, and herbs.

Add a can of navy white beans for additional hardness and protein. The beans should be drained and rinsed before adding them to the soup.

I usually add macaroni noodles to this soup. I typically cook the noodles separately and only add them before eating the soup, so they do not get mussy. If you’re someone trying to keep the calories low, try adding lentil noodles. These are delicious gluten-free noodle alternatives. They are both healthy and low-calorie. Note that lentil noodles get hard if you try saving them in the fridge, so only cook what you plan to eat that day.

Hamburger Vegetable Soup

You can add a variety of vegetables to this soup. So if you don’t have one of these listed below, try something you have on hand!

You can use frozen vegetables, but the texture of the soup turns out best with fresh produce.

Some of my favorite vegetables to include in hamburger soup are:

Tomatoes: I use a can of crushed tomatoes. This adds a lot of flavor to the broth of this soup.

Potatoes: I use pealed rustic potatoes, which are diced into bite-size pieces.

Carrots: peel and chop. I always note when I’m making soups not to add too many carrots to my soup. They tend to be my favorite, but if you have too many the soup gets sweet, and you don’t want that.

Peas: I use a half-bag of frozen peas and remember to add them toward the end of your cook time because they just need to warm up.

Total Time: 37 minutes

Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 cup of celery, chopped small
  • 1 rustic potato, cubed
  • 1 bay leaf
  • 3 tablespoons Italian seasoning
  • 2 teaspoons oregano
  • 1 15 oz. can diced tomatoes
  • 1 cup of frozen peas
  • 6 cups beef broth
  • 2 medium carrots, peeled and chopped
  • 2 cups macaroni elbows
  • 1 can of white navy beans, rinced

Directions

  1. Start by sauteing your ground beef, drain the grease, and set aside. 
  2. Next, saute the onion, celery and carrot. Cook until the onion is translucent, about 5 minutes.
  3. Saute garlic, one minute
  4. Fill with beef stock, crushed tomato.
  5. Add the ground beef back in, along with the navy beans, potato and frozen peas.
  6. Let it all simmer together for 30 minutes (or until vegetables are tender) with salt, pepper and herbs.
