Recipe: Veggie Loaded Turkey Chili

Our absolute favorite dinner recipes always have a few things in common: they’re delicious, they’re healthy, often comforting and easy to make! And this veggie loaded turkey chili checks all of those boxes and more. It’s such a warming, comforting meal that fills you up with tons of veggies, protein and fiber. It’s become a go-to weeknight dinner during the winter months and one we look forward to every time! Pssss…. chop up all your veggies the day before for an even faster weeknight meal.
Ingredients
- 1 lb lean ground turkey, beef or chicken
- 1 tbsp olive oil or avocado oil
- 1/2 medium onion, diced
- 1 small red bell pepper, diced
- 1 small zucchini or yellow squash, diced
- 1 medium carrot, diced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 2 tsp ground coriander
- 1 15 oz. can tomato sauce + 1/2 can water
- 1 15 oz. can crushed or petite diced tomatoes
- 1 15 oz. can black beans, rinsed and drained
- 1 cup corn, frozen
- Dash of cayenne
- Salt, to taste
