    Ingredients You’ll Need

    • Tortillas: We like to use the 6 inch flour fajita tortillas for this recipe since it makes pizzas that are just the right size for a single serving. Use whole wheat flour tortillas if you can find them for extra fiber. Flour tortillas work better than corn tortillas for this recipe.
    • Refried Beans: Traditional refried beans are made with lard, so we buy vegetarian refried beans to reduce the saturated fat in this recipe. To add extra flavor, we stir some chili powder into the can of refried beans as you heat them up; you can also use taco seasoning. If you don’t have refried beans you could also use mashed canned black beans. 
    • Red Enchilada Sauce: Red enchilada sauce adds great flavor to the sauce for these Mexican pizzas. You can substitute with green enchilada sauce in a pinch or jarred salsa.
    • Tomato Sauce: For this recipe, you’ll add some canned tomato sauce to the enchilada sauce to help thicken it so that it doesn’t run off the pizzas when assembling. 
    • Mexican Cheese: Finish off your Mexican pizzas with some cheese! We like to use finely shredded Mexican cheese blend because it melts so nicely but you can also use shredded Monterey Jack cheese or cheddar cheese.

    Variations

    • Add more protein: If your meat eater isn’t satisfied with this vegetarian copycat recipe, you can easily add some cooked ground beef, ground chicken, or ground turkey to these if you would like.
    • Make it vegan: You can easily make a vegan version of this recipe by using vegan cheese and serving with vegan sour cream. 
    • Make it gluten free: Simply swap out the flour tortillas for a gluten free alternative.
    • Make it lower calorie: Making this homemade mexican pizza recipe already saves you 140 calories but you can make it even lower calorie by using a low carb/low calorie tortillas or only using 1 tortilla to make your pizza which saves 90 calories.

    How to Make Mexican Pizza

    • Toast the Tortillas: You’ll want to crisp up the tortillas for this homemade Mexican pizza recipe first. Add tortillas in a single layer on a baking sheet and bake until they start to turn golden brown, about 12 minutes. You don’t need to make them fully crispy yet since they will get baked again once you add the toppings. 
    • Make the Beans: While the tortillas bake, warm up the baked beans and chili powder in a large skillet over medium heat stirring. 
    • Assemble: Assemble your pizzas by evenly dividing the beans onto 4 of the tortillas and spreading it with a spoon. Top with 1-2 tablespoons of the enchilada sauce and sprinkle with the corn and ½ of the cheese, red onion, and bell pepper. Top with the other crispy tortilla. Spread the rest of the sauce over the tops of the second tortilla on the pizzas, then the chopped tomatoes, then add the rest of the cheese, red onion, and bell peppers. 
    • Bake: Bake for another 8-10 minutes to melt the cheese. Transfer to a plate with a spatula and add your choice of toppings to serve!

    There are so many great toppings that you can add to these healthy Mexican pizzas; basically any of your favorite taco toppings work well. Here are a few of our favorite toppings: fresh cilantro, chopped tomatoes or pico de gallo, green onions, homemade salsa, guacamole or chopped avocado, sour cream (or plain Greek yogurt), hot sauce, or sliced black olives. We love to pair these with a glass of our skinny margaritas!

    The popular Taco Bell Mexican pizza menu item was made with beans and ground beef sandwiched between two tortillas and topped with a tomato sauce, cheese, and chopped tomatoes. It was first debuted on the Taco Bell menu in 1984.

    How Many Calories are in the Taco Bell Mexican Pizza?

    According to the nutrition information available from Taco Bell, the Mexican pizza has 540 calories, 29 grams of fat and a whopping 980 mg of sodium. This healthier version has only 400 calories and 13 grams of fat.

    Ingredients

    • 8 (6 inch) fajita tortillas (whole wheat if you can find then)
    • 1 (15 oz) can vegetarian refried beans
    • 1 teaspoon chili powder
    • ½ cup tomato sauce
    • ½ cup red enchilada sauce
    • ½ cup frozen corn, thawed
    • ⅓ cup chopped green bell pepper
    • ⅓ cup chopped red onion
    • ½ cup chopped cherry tomatoes
    • 1 cup shredded mexican cheese, divided
    • To serve: Salsa, Avocado, Cilantro, Greek Yogurt/Sour Cream, Hot Sauce

    Directions

    1. Preheat the oven to 350 degrees Fahrenheit. Arrange the tortillas in a single layer on a baking sheet (working in batches if needed) and bake for 12-14 minutes or until starting to turn golden brown.
    2. While the tortillas bake, add the refried beans and chili powder to a skillet over medium-high heat. Cook for 3-5 minutes or until the beans are warmed through.
    3. Assemble the pizzas by spreading ¼ of the bean mixture over 4 of the baked tortillas. Spread 1-2 tablespoons of the sauce mixture over the beans. Top with the corn, ½ of the bell peppers and red onion, and 1/2 of the cheese.
    4. Top with the second tortilla. Spread the rest of the sauce mixture over the top of the pizzas. Next, add the rest of the cheese as well as the tomatoes and the remaining bell peppers and red onions.
    5. Bake for another 8-10 minutes or until the cheese is melted. Add your choice of additional toppings like salsa, sour cream, cilantro, and more to serve.
