Recipe: Beef Stroganoff

This lightened up comfort-food recipe is a healthy spin on a classic: Beef Stroganoff! The rich, creamy sauce & slices of steak are a perfect dinner during these colder months. This dish is so savory and satisfying that you’d never guess it’s a lightened-up version of everybody’s favorite comfort food. Bonus: the whole dish is made in one pot, so easy!

Ingredients
- 1 tablespoon light butter
- 8 ounces sliced white mushrooms
- Salt and black pepper, to taste
- 1 tablespoon canola oil
- 1 medium onion
- 2 garlic cloves
- 1 1/2 pounds lean flank steak
- 2 tablespoons paprika
- 4 cups low sodium beef broth
- 8 ounces uncooked egg noodles
- 1 1/2 tablespoons corn starch
- 1 1/2 tablespoons cold tap water
- 1/2 cup light sour cream
- Diced fresh parsley, to taste

Reminds me of Swedish meatballs. To cut more sodium, I used half low-sodium beef broth and half water. Comfort food!
