Recipe: Broccoli, Cheese, n’ Quinoa Casserole

I could eat broccoli morning, noon, and night (in fact, some days I do!)  But sometimes, it’s hard to get my boys enthusiastic about broccoli for dinner.  Luckily, this recipe does the trick!  It’s that brilliant combination of broccoli and cheese that can make almost any broccoli-hater question their disapproval.  This casserole is like the ultimate mac n’ cheese, but it’s gluten free and loaded with protein thanks to the quinoa.

  • 1/2 medium size yellow onion
  • 1.5 cups cooked quinoa
  • 2 heads of broccoli
  • 1 tablespoon butter
  • salt
  • pepper
  • 1/3 cup Pacific Organic Mushroom Gravy
  • 1 cup milk
  • 1 cup sharp cheddar shredded cheese

What can I sub for the mushroom gravy?

    Hi Sally - we haven't tried any substitutions on that since it's a pretty specific ingredient. If you don't like mushrooms and that's why you want to substitute it, you could try another similar soup type product like cream of chicken or something like that. Our preference is always the more natural/organic brands since some of the products out have some not-so-good for you hidden ingredients.
