This all time classic chicken noodle soup recipe is healthy, comforting, and the best part is the slow cooker does all the work! Warm up with a bowl of this healthy slow cooker chicken noodle soup after a long day at work. With a few minutes of prep work you can come home to a healthy, low-fat meal fit for a king or queen. This simple soup recipe has all of the rich flavors of my Grandmas chicken noodle soup without any of the work or hassle.


  • 1 pound boneless skinless chicken thighs
  • 8 cups low-sodium chicken broth
  • 2 cups sliced carrots (from about 4 large carrots)
  • 4 stalks celery, chopped
  • 1/2 yellow onion, diced
  • 1 lemon, juiced
  • 3 cloves garlic, crushed
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 1 tablespoon poultry seasoning
  • 1 tablespoon fresh diced rosemary
  • 1 teaspoon fresh diced thyme
  • 6 oz whole wheat fusilli (gluten-free optional see notes)
  • Kosher salt, to taste
