Nothing says comfort food like a hot chicken pot pie! This amazing gluten-free, paleo meal is full of healthy ingredients and home-cooked flavor. This easy recipe makes leftovers into a delicious feast and freezes well creating the perfect make-ahead meal. We do suggest freezing the crust and pie separately for a flaky to-die-for pot pie.

  • Crust
  • 1 cup blanched almond flour
  • 3/4 cup tapioca starch
  • 1/2 teaspoon paprika
  • 1/2 teaspoon finely ground sea salt
  • 1/4 teaspoon gluten free baking powder
  • 1/8 teaspoon ground white pepper
  • 1/8 cup very cold butter
  • 1 large egg
  • 3 tablespoons ice cold water
  • Pot Pie
  • 1 1/2 Tablespoons butter
  • 1 large yellow onion, finely chopped
  • 1 pound russet potatoes, divided (1/2 lb peeled and cut into ½
  • 1 cup chicken broth
  • 1/3 cup full fat coconut milk (from a can)
  • 3 small or 2 medium carrots, peeled and cut into ½
  • 2 teaspoons kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound boneless, skinless cooked chicken meat (or turkey), cubed
  • 2/3 cup frozen English peas
  • 1 teaspoon finely chopped fresh thyme
  • 1/2 teaspoon finely chopped fresh rosemary
