Recipe: Southwestern Chicken Casserole

When my boys we living at home, they used to eat Chipotle at LEAST once a week. That’s a lot of money spent on Chipotle, so I thought to myself, how can we make this at home? With the help from our friends at Fit Foodie Finds, we tried this awesome at-home Chipotle recipe.  Not only was it easy to make, but it tasted virtually identical to a Chipotle burrito bowl!  Swap-out success!

Ingredients

  • 1.5 cups quick cooking rice
  • 2 cups chicken broth
  • 1/4 cup diced onion
  • 1 15 oz can corn
  • 1 15 oz can black beans
  • 2 large chicken breasts
  • 1.5 cup salsa
  • 1/4 cup fresh cilantro
  • 1/4 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon onion powder
  • 1/2 cup Colby Jack Cheese (optional)

How long, and at what temp do you cook this? It looks good.

Do you just mix all together?? And cook for how long?
