This Wild Rice Orzo Cranberry Salad is hearty, healthy and delicious. It’s a robust salad with layers of flavor to fill you up and allow you to truly enjoy every bite. It’s totally vegan and takes just 10 minutes to prep, which is perfect for those times when things are busy but you want to eat something delicious AND healthy (all the time, right?!).


  • For the Salad
  • 2 cups cooked wild rice
  • 2 cups cooked orzo
  • 1 1/4 cups cooked wheatberries
  • 3/4 cup currants
  • 1/2 cup dried cranberries
  • 1/2 cup frozen corn
  • 1/2 cup slivered almonds
  • 1/2 cup red pepper
  • 1/2 cup yellow pepper
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup parsley
  • 1/4 cup fresh basil
  • Champagne Vinaigrette
  • 1/4 cup Champagne vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground black pepper
  • 2 tablespoon olive oil
