You'll never have a sad desk lunch again with this delicious watercress, beet, avocado and lentil salad.


This salad makes such a happy lunch filled with so many delicious ingredients starting with watercress, which if you haven’t tried it, is an amazing source of vitamins and minerals and has great fresh flavor and crunch as well as avocado, beets and pecans all topped with a dijon maple dressing. And of course, the beluga lentils add a nice mix in texture along with protein and fiber. This is one salad that will satisfy your tastebuds!


  • 2 handfuls of watercress
  • 2 handfuls of leafy greens
  • 2 medium sized beetroots
  • 1/2 cup beluga lentils
  • 1 ripe avocado
  • 1/2 cup pecans
  • 1/2 teaspoon cumin
  • For the dijon-maple dressing
  • 2 tablespoons olive oil
  • 1 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon maple syrup
  • Salt and pepper
