I love when a classic gets a healthy twist! This delicious kale waldorf salad will remind you of the original but without the fatty mayo. If you don’t jump at the thought of raw kale, remember to do these two things: cut the bitter tasting stems out and then toss the kale in an acid like lemon juice.

Ingredients

  • 4 cups packed finely chopped raw kale (I used dinosaur kale, but any will work)
  • juice of 1/2 lemon
  • 1 large apple
  • 1 cup champagne grapes (or regular grapes, cut in half)
  • 3 stalks thinly sliced celery
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup plus 2 tablespoons raisins, divided (dried cranberries also work great)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons water, more if needed
  • 1 tablespoon red wine vinegar
  • 1/8 teaspoon sea salt

The recipe says it will take 15 minutes; it took me 45!

    Hi Kay - a recipe's prep time always runs under the assumption that the ingredient list is prepped and ready to go. Sorry that it took longer than expected but once all your ingredients are ready, it should only take about 15 minutes to make the dressing & toss everything together!
