When the winter season offers such delicious produce (hello, pears and persimmons!) why not take every advantage to sneak them into recipes? This in-season salad is fresh, flavorful, and bursting with nutrients! If you’ve never tried walnut oil before, this sweet and tangy dressing is a great opportunity to give the omega-3 champion a chance. Ooh, and I almost forgot the crunchy toasted pine nuts on top! Convinced yet?

Ingredients

  • 1 lb skinless, boneless chicken breasts
  • 5 cups Romaine lettuce, chopped
  • 2 cups red cabbage, shredded
  • 1 small red onion, thinly sliced
  • 1 pear, cored and diced
  • 2 persimmons, peeled, seeded, and diced
  • 1/2 cup pomegranate
  • 1/3 cup pine nuts, toasted
  • 2 tbsp walnut oil (or olive oil)
  • 1/3 cup red wine vinegar
  • 1 tbsp honey
  • Salt and pepper to taste
