Lightened up comfort food is one of our favorite things! This genius recipe makeover for broccoli and white cheddar quinoa mac and cheese is rich, creamy and only 313 calories!  This gluten-free healthy recipe is a home run with kids and adults. This recipe is so full of cheesy goodness you won’t believe it also has over 12 grams of protein per serving. You can definitely serve this as a side dish, but it’s so yummy we prefer it as the main course!

Ingredients

  • 3 cups water
  • 1 1/2 cups quinoa uncooked
  • 3 cups broccoli florets
  • 3 cloves garlic, minced
  • 1/4 cup gluten-free oat flour or gluten-free all purpose flour
  • 2 3/4 cup almond breeze unsweetened almond milk
  • 1 tablespoon butter
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 2 cups shredded white cheddar cheese
  • 1/2 teaspoon black pepper
  • For Topping
  • 10 buttery crackers, gluten free if desired (Ritz or a similar type of cracker is great)
  • 2 tablespoons grated vegetarian Parmesan cheese (or any Parmesan cheese you have)
  • Serve with: Hot sauce, Ketchup, Soy sauce, Red pepper flakes -- whatever you like!
