Recipe: Baked French Toast with Pumpkin and Cream Cheese

It’s that time of the year again for pumpkin flavored everything!  Anyone who knows me knows I am crazy about pumpkin.  Anything that has pumpkin in it, I’m almost guaranteed to love.  This french toast bake was no different.  It was literally like a pumpkin pie fused with french toast, and topped off with a maple cream cheese drizzle.  Seriously decedent, but still healthy, low sugar, and easy to prepare.  What’s not to love?

Ingredients

  • 5 or 6 pieces of whole wheat bread
  • ½ Cup Unsweetened vanilla almond milk
  • ½ Cup Egg whites
  • 2 Eggs
  • 1 tsp Vanilla extract
  • ½ Cup Splenda
  • ½ Cup Pumpkin puree
  • 1 tsp. Pumpkin pie spice
  • ¼ tsp. Ginger powder
  • ¼ tsp. Cinnamon
  • 1 Tbsp. Brown Sugar
  • 1 Tbsp. fat free cream cheese
  • 1 tsp. Low sugar maple syrup
  • 1 tsp. Splenda
  • 1 tsp. Unsweetened vanilla almond milk
  • ⅛ tsp. Vanilla extract
