While we love eating salads for mealtime at Get Healthy U, sometimes they just don’t fill you up and you’re reaching for a snack an hour later. Not this time. This salmon, sweet potato and avocado kale salad is filled with protein, fiber and healthy fats to keep you satisfied for several hours. Prep the salmon and sweet potato on Sunday and the rest will come together in a snap for healthy lunches all week. Healthy, filling and delicious – is there a better combination?

Ingredients

  • 1 pound coho salmon (or any boneless, skinless salmon)
  • 1 lemon
  • Salt and pepper
  • 6 cups kale
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey (maple syrup or leave out)
  • 1 tablespoon whole grain mustard
  • 1 apple, chopped
  • 1 tomato, chopped
  • 1 cucumber, chopped
  • 1/4 cup green onions, chopped
  • 1 sweet potato
  • 1/2 avocado
