Start off your day with this protein packed oatmeal superfood breakfast bar that is super delicious and gluten-free! Filled with antioxidant -rich blueberries, seeds and oats, these bars will provide you with long-lasting energy and curb your sweet tooth cravings. These delicious bars are dairy-free but come out moist and chewy and are a great breakfast choice or pre/post-workout snack.

Ingredients

  • Base
  • 2 cups old fashioned oats
  • 1 cup slivered almonds
  • 4 tablespoons honey
  • 1 tablespoon coconut oil
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoon cinnamon
  • 2 bananas
  • 1 1/2 teaspoons vanilla
  • 1 scoop vanilla whey protein powder
  • Topping
  • 1/2 cup old fashioned oats
  • 1/4 cup slivered almonds
  • 1/4 cup pumpkin seeds
  • 1 cup fresh organic blueberries
  • 1/4 cup of coconut-almond milk (or plain coconut or plain almond milk)
  • 1/4 teaspoon cinnamon
