I’ve been on a total quinoa kick lately.  Quinoa is one of the healthiest grains out there.  It’s a complete protein, which makes it a great source of protein for vegetarians (and meat eaters too!)  These quinoa pumpkin pancakes are exceedingly simple to make, and full of the robust flavors of Fall.  I whipped up a batch for my family the other night for breakfast for dinner.  We all agreed this recipe was a keeper!


  • 1.5 cups cooked quinoa
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp. vanilla
  • 1/4 tsp cinnamon
  • pinch of salt

This sounds like a very good pancake and healthy for diabetics as well.
