Recipe: Superfood Coconut Oil Granola with Chia Flax

Granola has become fairly mainstream in recent years especially in the cereal aisle. But lots of brand are loaded with excess oil and sugar, so once you make your own, there isn’t any turning back. We love being able to control all the ingredients and make it exactly to our liking with nuts, spices, fruit, etc. And this version is simple, classic, full of aroma and spice and good for you too: made with chia seeds, flax, oats, nuts and coconut oil.

Eat it with almond or coconut milk as cereal, with Greek yogurt or on a banana or an apple topped with nut butter! Yum!

Ingredients

  • 2 cups rolled oats
  • 1/4 cup oat flour
  • 2 tablespoons flaxseed meals
  • 2 tablespoons chia seeds
  • 3/4 cups raw almonds
  • 3/4 cups raw pecans
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of cloves
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • Optional
  • 3/4 cup dried cranberried or cherries
