Recipe: Carrot Cake Bread with Cream Cheese Frosting

This carrot cake bread is moist and delicious and the low-fat cream cheese is to die for!  The bread is made with whole wheat flour instead of white flour and applesauce instead of butter or oil.  It tastes indulgent, but it still healthy enough that you can feel good about serving it to your family.

Ingredients

  • 1 1/4 cup whole wheat pastry flour or white whole wheat flour
  • 1/4 cup quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 medium ripe banana, mashed
  • 1/2 cup dark brown sugar
  • 1 egg
  • 1 egg white
  • 1 teaspoon vanilla
  • 1 tablespoon coconut oil
  • 3 tablespoons unsweetened applesauce
  • 1 cup shredded carrots (about 3 large carrots)
  • 1/3 cup Blue Diamond Almond Breeze Unsweetened Vanilla Almond Milk
  • 1/4 cup pecans, plus 2 tablespoons for topping

For the frosting:

  • 4 oz whipped or reduced fat cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla
