This healthy vegan berry coconut parfait is SO delicious! This simple gluten-free recipe uses pecans and dates for the crumble making this recipe grain-free and full of protein. We are huge fans of coconut whipped cream, and this simple recipe is sinfully delicious and way better than store bought. Use whatever berries or fresh fruit is in season and you having an amazing dessert everyone will enjoy.


  • For The Crumb Layer
  • 1 cup raw pecans
  • 1/4 cup pitted dates
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt
  • For The Coconut Whipped Cream
  • 2 cans full fat coconut milk (cream removed)*
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced in half
  • 8 125mL mason jars
