Recipe: Baked Avocado Stuffed with Goat Cheese, Zucchini, and Balsamic Reduction

I love to use this recipe when I am entertaining.  People think that I spent hours in the kitchen, but these stuffed avocados are actually quick and easy to make.  Even better, they are always a hit with my guests. These stuffed avocados are the perfect size for a snack, side dish, or even an appetizer.



  • 1 tsp Olive oil
  • 1 tsp Garlic, minced
  • 1/2 A small zucchini, cut into thin slices
  • Pinch of salt
  • 1/4 Cup Balsamic vinegar
  • 2 Large avocados
  • 2 Oz goat cheese (about 1/2 oz per each avocado half)
