And this recipe showcases them in all their glory with a middle eastern spice blend called za’atar. Combined with the chickpeas, black rice, cherry tomatoes, lemon juice and parsley, it’s a whole world of flavors creating the most wonderful kind of salad. Whether served as an appetizer or a vegetarian dinner, this recipe is a must-try.



  • 3 avocados
  • 2/3 cup chickpeas (soaked or canned)
  • 1/2 cup dry black rice
  • 8 cherry tomatoes
  • 1 garlic clove
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons za'atar spice blend (see below)
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 lemon
  • 1 pinch of salt
  • 1 pinch of chili flakes (optional)
  • 1 handful of parsley
  • Freshly ground pepper
  • For the za'atar spice blend
  • 4 tablespoons toasted sesame seeds
  • 4 tablespoons ground sumac
  • 1 tablespoon dried thyme
  • 1 teaspoon ground cumin (optional)
  • 1 pinch of sea salt
