That’s why I’m ecstatic about this lightened up recipe that cuts the fat and the calories but keeps all the glorious flavor! What’s the secret? Almond milk instead of cream and a sneaky serving of cauliflower. If you forgo the optional bacon bits as garnish, this is the perfect meatless Monday for your family that takes less than 30 minutes to make!


  • 3 cups cauliflower florets
  • 3 cups broccoli florets
  • 10 cloves of garlic, peeled
  • 3 + 1 tablespoons EVOO, divided
  • 4 shallots, finely diced
  • 2 cups white cheddar cheese, shredded
  • 1 cup Almond Breeze Original
  • 2 cups vegetable stock
  • salt and pepper to taste
  • Optional toppings: EVOO, cheese, bacon bits
