Have you ever tried cooking with eggplant? This paleo recipe will make you want to do it over and over again. The ground beef stuffed eggplants can easily be made in advance and then thrown in the oven once you get home from a long day. A super satisfying meal that the whole family will love – better yet, get the kids to help you stuff the eggplant boats!

  • 1 1/2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 5-6 medium cloves garlic, finely chopped
  • 2-3 large Italian eggplants (about 3 pounds total), insides scooped out and finely chopped, shelled rubbed with olive oil, salt and pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1 1/2 pounds ground beef
  • 1 1/2 cups homemade pasta sauce plus more for serving (or your favorite jarred sauce!)
  • Handful fresh parsley leaves, chopped (for garnish)
  • Topping
  • 1/3 cup blanched almond flour
  • 1 tablespoon olive oil
  • Pinch salt
