This is one of our favorite vegetarian chili recipes. It takes a bit of prep work, but makes a ton of healthy and delicious chili. The combination of peppers creates a rich, smoky southwestern flavor. This tasty recipe is also low fat and loaded with protein, top it with fresh avocado and Greek yogurt for the perfect meal.


  • 1 1/2 tablespoons extra virgin olive oil
  • 2 red onions, diced
  • 3 bell peppers, diced
  • 1/2 cup chopped fresh cilantro stems
  • 1 1/2 tablespoons dried oregano
  • 7 garlic cloves
  • 3 dried ancho chile peppers, stemmed, seeded, and finely chopped
  • 1 tablespoon ground cumin
  • 2 tablespoons tomato paste
  • 1 teaspoon ground coriander
  • 1 3/4 teaspoon kosher salt
  • 1 teaspoon freshly ground pepper
  • 1/2 teaspoon ground cinnamon
  • 1 bay leaf
  • 4 1/2 cups organic vegetable broth
  • 1 (16-ounce) package dried white beans
  • 1 (26 ounce) container unsalted tomato puree
  • 3 zucchini, chopped
  • 1-15 ounce can unsalted fire-roasted diced tomatoes, undrained

that seems like a rediculous amount of salt. far too much surely!?

    For 12 servings 1 3/4 teaspoons is correct. Feel free to reduce it if it feels like too much for your taste, however.
