Recipe: Baked Eggs in Peppers

Not only are these little pepper cups adorable, they are low-carb and high protein! Making them is literally as simple as slicing peppers, cracking eggs inside with a little sprinkled cheese, and tossing them in the oven for 15-20 minutes. You can futz around with the baking time depending on whether you prefer runny or hard egg yolks. Great for those with gluten-sensitivities, too!
Ingredients
- 2 sweet peppers
- 1/2 cup water
- 4 eggs
- 1/2 cup shredded cheese
- salt & pepper to taste
